These are thick-cut, bone-in pork porterhouse chops, taken from the rear of the loin. Each chop includes the loin along with a portion of the tenderloin, which is what gives this cut its name and its balance of tenderness and flavor.

Our pigs are raised on pasture, with room to move, root, and behave like pigs. They’re fed a grain ration from a local mill to support healthy growth, no shortcuts, no gimmicks. The result is pork with real structure, flavor, and flavorful fat where it belongs.
