Grass Fed and Finished Lamb Shanks

Recipe: Red Wine Braised Lamb Shanks
Ingredients:
- 2 pasture-raised lamb shanks
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup red wine
- 1 cup beef or lamb broth
- 1 can (14.5 oz) crushed tomatoes
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Optional: fresh parsley, for garnish
Instructions:

Season & Sear Generously season the lamb shanks with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Sear the shanks on all sides until they develop a rich, brown crust. Remove and set aside.

Sauté Vegetables In the same pot, add the onions, carrots, and celery. Sauté for about 5 minutes until they soften. Add the garlic and cook for another minute.

Deglaze & Braise Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and let the wine reduce by half. Return the lamb shanks to the pot, then add the broth, crushed tomatoes, rosemary, and thyme. The liquid should almost cover the shanks.

Slow Cook Bring to a simmer, cover, and cook on low heat for 2.5 to 3 hours until the lamb is tender and falling off the bone. Alternatively, you can transfer the pot to a preheated oven at 350°F (175°C) and cook for the same amount of time.

Serve & Enjoy Once done, remove the lamb shanks from the pot. For a thicker sauce, continue simmering the liquid for another 10 minutes. Serve the lamb shanks with the sauce over mashed potatoes, rice, or polenta, and garnish with fresh parsley.
